If I have exhausted all options for work (i.e. asked around with my coworkers, looked on my own for projects, etc.) I have been known to use the time to prepare for certification exams. That way I am benefitting the company by increasing my skills.
I also look around for manuals to create for the office (i.e. a help desk manual, instructions on using features of the copier, etc.)
